Ice sugar: 210 g
Sugar powder: 90 g
White (s) of egg: 130 g
Almond powder: 150 g
Vanilla pod (s): 2 piece (s)
For the cream
1/2 skimmed milk: 25 cl
Egg (s): 2 piece (s)
Sugar powder: 70 g
Wheat flour: 40 g
Sweet butter: 150 g

FOR THE SHELLS OF MACARONS:

Preheat the oven to 160 ° C.

With a blade robot, reduce the almond powder and the very fine powdered icing sugar, then sift.

Beat the egg whites, squeeze with the sugar and stir in the sifted mixture of almonds. Using a plastic horn, «macarone» the preparation (gently fold the preparation on itself taking the entire mass, the device should become soft and shiny and make a ribbon).

Add the seeds of 2 vanilla pods.

With a pastry bag, place the macaroons on a sheet of baking paper and let them crust for 15 minutes at room temperature. Then bake at 160 ° C for 12 to 15 minutes.

FOR THE CREAM:

Put the milk to boil with the 2 vanilla pods.

Blanch the eggs with the sugar, add the flour then the boiling milk. Put the whole thing to cooking for 3 minutes as soon as the boiling boils. Then pour the mixture on a plate with a film of food and cool quickly.

Remove the butter so that it is at room temperature.

In a bowl with a whisk, smooth the pastry cream with the butter (1/3 of the weight of the pastry in butter).

Glue the macaroons 2 by 2 with a little vanilla cream and reserve in the refrigerator until tasting.
